The production of “Methode Traditionnelle” sparkling wines has been an integral part of the winemaking history of Blue Pyrenees Estate, and sparkling Shiraz wines, have been a unique and very important part of Australian wine making history. Selected blocks of Shiraz, grown in our estate vineyards, are monitored throughout the growing season and the weeks approaching harvest, and are picked at optimal ripeness especially for sparkling Shiraz production. Expressing vibrant blue and red berry fruit characters, synonymous with the variety and the region, the grapes are fermented on skins for 6 to 8 days to create a soft and fresh young base wine before maturation in old French oak barrels for 12 - 18 months. The tirage liqueur and a selected yeast culture is added to the final blend to initiate the second fermentation in the bottle. After a minimum of 18 months maturation on yeast, each bottle is riddled, disgorged, and packaged, ready to be enjoyed on any occasion.
