FlavourThe palate follows on from the aromas with strawberry, melon with a creamy texture throughout the mid palate. It exhibits a soft fleshy mouthfeel whilst retaining a fresh long finish.
Parcels of Pinot Noir grapes from the Blue Pyrenees Estate vineyard were harvested during the cool of morning to retain flavour and brightness. The juice was fermented between 14-16 degrees Celsius to enhance the aromatic purity and highlight freshness. The wine underwent Malo-lactic fermentation and battonage on yeast lees to add texture and complexity of flavour. These grapes and techniques create a thoroughly enjoyable wine to enjoy slightly chilled on a warm summer’s day.
