It will continue to unfurl over the medium term.
Our GO Range highlights fruit purity, freshness and drinkability. Gentle extraction over a period of 7 days before short term maturation in French Oak barriques allow us to capture the essence of Pyrenees Cabernet Sauvignon.
Our Single Block wines allows us to express the unique qualities of our most distinct and iconic blocks. They are only released in exceptional vintages. Located five kilometres south of Glenlofty, Decameron Station sits within the Grampians GI. The Cabernet Sauvignon hailing from this vineyard exudes more lifted redcurrant fruits as well as hallmark regional spices. A softer touch is warranted when handling this fruit. 3 days of pre ferment maceration to extract colour and more gentle phenolics is followed by a 7 day ferment carefully pumped over twice daily with temperatures capping out at 28 degrees celcius. 12 months in tight grain french barriques, 15% new.
